Regarding refrigerating dough overnight-
1. Why do you do an abbreviated rise ~ 1 hour rather than placing dough directly in refrigerator?
2. Why do you deflate the dough after the abbreviated rise before placing in the refrigerator?
I've read similar dough recipes that place the dough directly in the refrigerator after mixing.
