We made these through the shaping step then let them rise 15 minutes on the counter before putting in the fridge overnight covered tightly. It ended up being close to 16 hours in the fridge when I took them out of the and rested on the counter while the oven preheated for 15-20 minutes and then baked. They turned out perfectly. Texturally these rolls deliver. I prefer a stronger yeast flavor though.
