Hi Mash, I wouldn't recommend proofing these rolls in the shaped form overnight in the refrigerator, but you could certainly refrigerate the dough after a slightly abbreviated first rise (60 minutes). Deflate the dough and place it in an oiled bowl with plenty of room to rise and cover the bowl well so it doesn't dry out in the fridge. The next day you can go straight to dividing and shaping the rolls from the refrigerator (which will help to warm up the dough), but the final rise will still take a bit longer this way.
