We're glad to hear that this recipe is well-loved in your kitchen, EE! A great dairy-free butter option is Miyoko's, you could also use solid coconut oil here but that will impact the flavor of the rolls. We wouldn't recommend using a liquid oil though, because you mentioned, this dough is already pretty soft. We hope this helps and happy baking!
