I made the Amish dinner rolls last week before reading this Blog. You explained exactly why my rolls were a little lumpy (potato) and slightly dry (I kept adding flour because it was so sticky). I have a new batch rising now in the bowl. The difference in the dough itself is astounding--it is smoother and a little glossy. I can't wait to see how they come out. I confess that rather than dirtying my food processor I went the old-fashioned route of using my blender, lol. Thank you.
