I made these by using the details in the blog. I weighed the potato before cooking and after. BUT, I used 2 flaxed eggs _ (2T flax with 5T of water - let stand for at least 5 min)...I am trying to be PURELY-plant based...so I need to experiment with butter options. They turned out beautifully! They had these charming brown specks through out the rolls, which made them look more nutritious and rustic.
