Hi Emily! While we haven't tried this method  ourselves, my concern would be that the sugar would need to be constantly stirred for a long period of time to become evenly toasted without melting or scorching. It could be worth a try but the direct heat of the stove/induction burner could cause some complications to the process. Happy baking!
