Every oven is a little different Naomi, and unfortunately we don't have an expert on call for each one! If you are ever unsure, an oven thermometer is an invaluable baking companion and highly recommended by the Baker's Hotline. For your oven, we recommend keeping the temperature at 300 degrees so that you don't have any issues with melting and simply letting the sugar bake for as long as needed to get the color you desire. It might take a bit more patience, but the sugar won't be compromised, even if it takes two or three times as long. Although it does tie up your oven for other baking adventures. Best of luck!
