It works beautifully! I was given some homemade, toasted vanilla sugar as a gift last year, and it was delightful. I haven't made candied citrus peel with toasted sugar before, but I imagine it would work just fine. You may find that the subtle toasted flavor is overwhelmed by the stronger flavor of the peel, however.
