I tried toasting regular granulated sugar as well as Baker's Special Sugar, which is superfine sugar. They both worked just fine — superfine tends to clump slightly so be even more diligent about your stirring to break clumps up during toasting. Avoid using coarse sugar as it may melt/toast different than regular granulated sugar.
