Hi, Jessica! As the story goes, Stella Parks was working in a cold basement kitchen. She sometimes put her ingredients (like flour, sugar, etc.) on a sheet pan in a very low oven to warm them up just slightly to get them to normal room temperature. As busy bakers sometimes do, the tray of sugar warming in the oven slipped her mind, I believe. We have that happy accident to thank for toasted sugar!
