While we didn't try using the convection setting in the test kitchen, you're welcome to test it out if you're feeling adventurous. Keep in mind, the convection setting on an oven tends to make the heat more intense by about 25°F, so you'll want to toast the sugar at 275°F. The air that circulates in the oven due to the convection setting may only reduce moisture from the surface of the sugar; you'll still want to stir every 30 minutes or so to release steam from the bottom of the pan.
