Isabelle, if you'd like to only make 1 pound of toasted sugar, you can certainly give it a try. You'll want to use a relatively small pan; a 9" x 5" ceramic loaf pan might be best. The sugar should be about 1" thick to prevent it from melting. Toast the sugar at 300°F for 1 to 4 hours depending on how caramelized you want it to be, as you would with a full bag of sugar. Stir the sugar every 20 minutes or so to release steam; the small quantity of sugar may heat up quickly so keep an eye on it. While toasting 1 pound of sugar could work just fine, you might consider making a full 4-pound bag since you'll be investing quite a bit of time toasting it. This way you get more mileage out of your toasting sugar time!
