Hi, Steve. You can certainly toast your sugar and use it later. It'll keep indefinitely if stored in an airtight container. Over time, it might get slightly clumpy if there's still some additional moisture in the sugar when you put it in the jar. If it does clump, simply pulse the sugar in a food processor to return it to a granulated form, then bake away!
