Hi Chie, most cake recipes will give you a recommended pan size, so you could definitely calculate the area and then scale up or down, according to your needs. Or you might look at some of our recipes and add up the gram weights to give you a good idea of the weight of batter that fits nicely in a 9" X 13" pan. For example, the weight of the ingredients in our Classic Birthday Cake recipe is 1219g. If your recipe makes a smaller or larger amount you can divide what you need (1219g) by the weight of the ingredients in the recipe you have. This will give you a multiplication factor that you can use to increase or decrease the weight of each ingredient in your recipe so it will fit nicely in a 9" X 13" pan. Keep in mind that there is a range of batter weights that will fit in this size pan, but between 1280-1380g is pretty typical, depending on the type of cake. Chocolate cakes tend to be a bit heavier than white cakes.
