I just started my sourdough starter from scratch 10 days ago. It went very well and I think it was fully ripe by day 7 or 8 so I was itching to try a bake. I wanted to jump right into Naturally Leavened Sourdough Bread but heeded the experts exhortations to start with Rustic Sourdough. I spent this afternoon working with this recipe, which I have to admit was nice in that you weren't chained to the kitchen. Everything went according to plan, I think. I am now waiting with baited breath for the obligatory cooling period before slicing into one of these lovely loafs. I will review the recipe once that has happened but my confidence is high!
