Well, it is all about patience. In my case, it is difficult because I have the wine ready when the oven’s timer goes off. But, I am learning. And I’ve learned a lot from your blog. Thank you!
I got my starter as well as it can be. The activation process is now about 2.5 hours and the bulk rise actually doubles. I’ve also tried the cast iron bake and I got good results.
