PJ mention feeding the starter a few times before it doubled in height.. do you discard between each of those feedings??

I notice that my sour dough starter gets that grey liquid/alcohol separation on top (even 20-30 minutes after a feeding). I’ve never seen mine bubble as aggressively as the pictures in this blog, nor have I really seen mine double in size the way it’s describe here :( am I doing something wrong??
