Hi Jennifer,
You do need a good volume of the dough to make a taller loaf. If you'd rather not use the full amount of dough in a Dutch oven, you can divide the dough into 2/3 and 1/3, baking the larger portion as a loaf and the smaller portion as a small boule or rolls.
