Hi Shirley, adding steam to the initial part of the bake is often helpful in recipes that are baked at a higher baking temperature (400F or higher) in order to achieve a good crust color and full expansion. While the rustic sourdough recipe does suggest spraying the loaves before baking, this often doesn't supply quite enough moisture.
