Hi Nestor! There are two main reasons we call for King Arthur Unbleached All-Purpose Flour for most of our yeast bread recipes.
Our all-purpose flour is higher in gluten than other all-purpose flours on the market, so it makes a great loaf of bread. Also, it’s carried in more markets around the country than our bread flour, so it’s easier for more people to obtain. If you'd like to use bread flour instead, go for it! You will want to increase the water by 5g or 1 teaspoon for each cup of bread flour substituted this way. Happy Baking!
