I waited until my starter was in it's 7th day. Very ripe. I used quantities just as measured. 227g of starter, 1 1/2 cups water, yeast, salt, 5 cups KAF all purpose.
I was very careful with my measurements and my dough was so dry and stiff, I knew at that point it would never work but proceeded anyway. Well, disaster.
Not recommended.
