Hi, Baxter! This is designed to be a good recipe for beginners who are just learning about making sourdough. The commercial yeast is a bit of a safety net in case your starter doesn't perform very well yet. But feel free to leave it out if you're already comfortable with making naturally leavened sourdough breads!
