I have found that once my sourdough bread has baked in my Dutch Oven, I remove it from the parchment paper and place the precooked loaf right on my oven rack for another 15 minutes. It comes out so crusty and so nicely browned. I wasn't getting that result when I put the uncovered Dutch Oven back in the oven for 15 minutes of final browning. Also, I discovered that after emptying my dishwasher while it was still warm, I placed my sourdough loaf in the empty dishwasher to rise. It is a perfect place, warm and moist.
