Hi Deanna, there are a couple of things you can do to up the flavor of your bread. The first is to make sure your starter is active when you are adding it to your dough. Also, feeding your starter with some rye or whole wheat flour will add to the acidity of the starter. After the loaves are shaped, instead of letting them rise on the counter, cover them well and let them proof in the fridge overnight. This will also increase acidity.
