Hi David, you'll want to make sure that your overnight sponge is active and bubbly. You can also add an additional 1/2 teaspoon of baking soda. For extra "lightness" separate the eggs. Add the yolks to the batter but whisk the whites until they hold soft peaks. Gently fold the whites into the batter. Enjoy!
