Hi David, you'll want to confirm that your overnight sponge is active and bubbly. You can also try adding another 1/2 teaspoon of baking soda. For additional "lightness" separate the eggs. Stir the yolks into the batter. Whisk the two egg whites until they hold soft peaks. Stir them gently into the batter. Enjoy!
