Ok, total beginner here! And these may be stupid questions buuuutttt... what do you cover the bread with when rising? Both times? And when I mix it all in the beginning is it an aggressive kneading or gentle till just combined? This is the third recipe I have tried, hoping third times a charm! Sorry again for the total newbie questions
