That's a great question, Carol! Feeding your starter bread flour vs. all-purpose shouldn't make much of a difference. Is it about the consistency of pancake batter when you feed it? If it feels a little bit dryer than that, your starter might be considered a bit more "stiff," which isn't bad at all! It's got just as much leavening power, but you don't see quite as much rise in the jar. If your starter is in a cold room, this could also be slowing your yeast down a bit.
