That's a great question, Carol! Feeding your starter bread flour vs. all-purpose shouldn't make much of a difference. Is it about the consistency of pancake batter when you feed it? If it feels a little bit dryer than that, your starter might be considered a bit more "stiff," which isn't bad at all! It's got just as much leavening power, but you don't see quite as much rise in the jar. If your starter is in a cold room, this could also be slowing your yeast down a bit. If neither of these seems to be your starter's issue, we'd love it if you got in touch with our Baker's Hotline so that we could troubleshoot your starter in more detail. Happy baking!
