That's a great question, Mary! The flavor of your bread will depend on the recipe, the length of the time it rises, and the composition and feeding schedule of your starter. It's actually a very complex process! If you love a really nice sourness to your bread, though, we think trying our Extra-Tangy Sourdough Bread recipe is the perfect place to start. You'll also find some great advice on developing flavor in our article Artisan sourdough bread tips: Part 2. While the earlier parts of this blog post are about shaping, section 7 is all about getting that perfect flavor. Happy baking!
