This sounds amazing! One question: I know that vegetable oil can add a necessary moisture to bundts and other baked goods, but I'm not a fan. Plus, it seems the pumpkin should add quite a lot of moisture itself. Any chance the oil could be replaced with sour cream here? (It's the secret to my all-time favorite chocolate bundt recipe.)
