I love the way you've presented this recipe. I think it's important for experienced bakers to demonstrate how to tweak recipes so that less experienced bakers feel comfortable with real-world baking. Yes, the recipe calls for Granny Smith, but feel free to grab what you have in your backyard! I think the world needs more of this :)
