I just made this using white whole wheat and it didn't work at all. Dough was puffy after first rise but ended up kind of dry and tight when I shaped it. It really didn't rise the second time and there was no oven spring. It looks more like a small quick bread than a yeast dough. I weighed all ingredients and my yeast is definitely fresh. It seemed sticky enough when I first started kneading so I didn't add more liquid, but maybe I should have?
