Hi Carol, this dough can be rather wet and sticky to begin with, but it should become less so as you continue kneading. It sounds like your dough may have required a little more kneading time, but I suspect it will be much more manageable when you take it out of the refrigerator. Ordinarily I would recommend allowing the dough to go through at least an abbreviated first rise before you refrigerated it, but it should still rise once the dough has had an opportunity to warm up. If the dough didn't rise well in the refrigerator, it will likely need time to rise and warm up before it's ready to shape. Sticking the dough in a warm spot and giving it periodic folds will help even out the temperature and give you a better sense of how the dough is progressing.
