Hi Felice, as long as it is proofed sufficiently, it should be fine. Sometimes, especially in cold weather, it is hard to get the dough to proof that high. Next time, try putting the shaped loaf in an enclosed space like your oven or microwave and then add a Pyrex cup of boiling water. The warm and humid environment is perfect for proofing bread.
