I baked a brick!
My daughter had just baked her first loaf of bread using the Back of the Bag Oatmeal recipe. She was curious about the version that called for all whole wheat flour so I said I'd give that one a try. I have to say that I was a bit dubious about the recipe but I trust King Arthur and went for it. I followed the directions carefully, measured everything just the way I was suppose to and the result was a disaster. Instead of being a sticky dough mine resembled what you would expect for a topping for apple crisp. I added more liquid so I could at least get the dough to hold together. That wasn't much help. I did finally create something that resembled a bread dough but just barely.
My finished loaf could easily pass as a door stop. I did go through and read a lot of the comments from other bakers about making a whole wheat version of this recipe. They all used a mixture of whole wheat and white flour which seems to be successful. The 100% whole wheat version was the biggest baking fail I've had in years.
