Hi Deborah, not to worry! The things you described, tearing and stickiness, are both common with oat bread dough. The difference in appearance was most likely due to the difference in flour and possibly also weather. It's summertime so humidity plays a huge role in baking, especially with yeast dough. We recommend checking out this blog on making adjustments to fit the season for best results.
