This was great! I ended up using quick oats, because they were the only kind I had. My texture was more dense and crumbly than your photos, and it didn’t rise nearly as much in either proofing, but I think that was due to the quick oats as well as the fact that I suspect that I didn’t knead it quite long enough. My family loved it warm from the oven with a little bit of butter!
