This is such a great recipe. It's simple and rises a little faster than the white bread I usually make. I make 1.5 x's the recipe (but don't increase the yeast) and bake in a large pain de mie pan. I weigh the ingredients and mix/knead in the stand mixer. It comes out perfectly every single time! I often use Bob's Red Mill 5 grain cereal, which is a little more interesting, crunchier and nuttier than plain oatmeal. It's great toasted with butter and cinnamon sugar and makes great sandwiches. My kids love it!
