Katherine, it really does just depend on which milk is your favorite, but I've made this recipe myself with oat milk (fittingly enough!), and the flavor was wonderful. The only other change I made was to use Earth Balance Baking Sticks instead of butter to make the recipe without dairy, but all the amounts and steps were unchanged. Enjoy!
