Cam, you could certainly add a bit of oat flour to increase the oaty flavor of this loaf, but you'll still want a fair bit of wheat flour in it to provide structure. We'd suggest replacing 1/2 cup (60 grams) of bread flour with 1/2 cup (45 grams) of oat flour and see how that works out for you. Then you can decide from there whether to increase or decrease the amount for future loaves. Happy baking!
