Hi Steve, it can vary a bit, depending on the bread recipe you're baking and how high it is likely to rise, but I would say a good average weight for dough in the 9" Pullman loaf pan is 800g. For a denser recipe that isn't likely to rise too aggressively (like our smaller whole wheat pain de mie recipe), you could go up to 900g. Another way to approach this is to multiply the weight of each of the ingredients in the larger recipe by .69. This should give you a reduced recipe that will fit in your smaller pan.
