Removed the Japanese Milk Bread from the Pain de Mie and it is perfect! Used the temp test thermometer to recommended temp, cooled in pan, 10 min and did the reverse cool on rack, did notice a very slight slump on sides and turned to one side and it cooled 20min then turned upright. Really pretty caramel color. Feels very light. Can’t wait for it to cool! I let it rise 1” from top of pan (did the peek with leaving lid off 1” and placing wrap across the top to keep a check. Placed on the lid and baked 20 min at 350, removed lid and baked 15 min more.
