another feature of the small pain de mie is that it fits in the zojirushi virtuoso bread machine. use the normal zoji bread pan to mix & knead. transfer to the pain de mie after shaping for final rise and bake. no need to heat the oven. 60 minute bake cycle seems to about right for most loaves.
