I have a couple of these "USA Pans" pullman pans. I've seen recipes using them at various sites, and so far literally every recipe says to spray with oil. And I do. But the notes that came with the pans said not to use spray! They don't say why, but I presume that it's because they worry that some sprays may attack the proprietary non-stick surface that is one of the selling points of these pans. Any wisdom on that?
