Thanks so much for this post. I bought a 9x4" pain de mie pan a while back and I've used it a couple times. I don't usually buy pans that are only good for one thing so I'm glad to read that it can do so much more. My gluten-free cousin is coming at the end of the month so I'll have to try the GF Toasting and Sandwich Bread.
