Hi Kathryn, I would recommend reducing the buttermilk to 1/2 cup when adding the zucchini. I would give the zucchini a good squeeze as well, but I suspect this will work with either 1/2 cup or 1 cup of added zucchini, although baking time may be a bit longer, depending on how much zucchini you add.
