When I bake quick bread using zucchini I prepare the zucchini by freezing 4 cups of shredded zucchini to make 2 loaves of bread. I then thaw the zucchini and drain out the water. This works well for Lemon Poppy Zucchini bread my last loaf of traditional zucchini bread was way too dry. Should I be using the zucchini undrained?
