Have you tested recipes incorporating other types of vegetables? I'm not much of a veggie eater but I do love baked goods and I've decided that if I'm going to eat it (bread, scones, granola bars, toaster tarts, etc) I have to make it. Since vegetables add a lot of moisture I need to learn how to adjust my recipes. Having said that, incorporating whole wheat flours does tend to try out certain things - somewhere there's a balance, right?
