I have found adding a tablespoon or two extra of water helps tremendously. In the winter here, also in CO, it may even help to go with 3 extra. The higher the hydration seems to result in much better bread (in my opinion) though it's just a bit more difficult to work with.

So long as you're making tasty bread and sharing with people, nobody will notice.
